Recipe: The Fluffiest Of Pancakes


Hooray! It's Pancake Day! And you know what that means?! Well, obviously it is compulsory to eat a huge stack of these tasty treats and stuff our faces. It would be the only decent thing to do. ðŸ¥ž ðŸ¥ž ðŸ¥ž

When it comes to pancake disasters, I've had countless. Things normally come out the pan which resemble something more like scrambled eggs than actual fat, fluffy American style pancakes.



Tried as I might, it was a little bit useless and I usually ended up passing off shop bought ones as my own....that was until I discovered this recipe. As rubbish as you might think you are at making pancakes, I can assure you, that if mine come out like this, then so will yours. They're flippin' impressive and you'll probably feel quite chuffed with yourself.

Ingredients:

  • 135g plain flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp caster sugar
  • 130mil milk
  • 1 large egg
  • 2 tbsp melted butter (allowed to cool slightly) and extra for cooking

Method:

Sift the baking powder, flour, salt and caster sugar into a bowl and in a separate jug, whisk the egg and milk together. Add the melted butter to the wet mixture - make sure it's not piping hot. It's better if it's cooled a little first.

Make a little well in the middle of the flour mixture and then pour in the wet mixture a little at a time, mixing as you go. Beat until you have a smooth batter and then leave to stand for about 5 minutes.

Heat a non-stick frying pan with a knob of unsalted butter.

Add a ladle of batter and leave until you begin to see bubbles in the centre of the pancake. It might seem a little bit thick, but don't panic - this is exactly how they need to be. 

Loosen the pancake and flip like you mean it! It should be lovely and golden brown on each side and about 1cm thick. 

Repeat until all the batter has been used up.

Serve immediately with the most calorific things you can get your hands on. Honey and lemon, maple syrup, lemon and sugar, strawberries and cream.....or like me - chocolate sauce and gorgeous chocolate treats on the top....the options are endless.
